You can cut the book to have the best scan but personally there are scanners out there that has the book at a 90 degree angle at the binding and then the scanner scans it to the edge but they are around $2200

The difference of the all in one printer/scanner and the flatbed scanner is the DPI and scanning speed, the all in one is slower then the flatbed I believe, and the different DPI settings for each can have a different dpi "All in one" 600-4,800 DPI and "Flatbed" 600-6,400 DPI at around the same price, also the higher DPI the slower the scan is.
