First, this is an Anime (for public amusement so they need to contain something really unreal e.g. an imouto who is blonde asian tsundere and otasume).
Second, they have never been in actual relationship with an opposite sex. People never know that ordinary people needs ordinary love not exotic encounters until they have a live fire drill.

Sometimes they do, the original To Heart anime comes to mind. (Unless I'm remembering it wrong, pretty sure Hiroyuki finally realized he liked Akari in the last episode.) But the original To Heart was much more of what's now called "Slice of Life" anime, so having that ending makes sense. ヾ(´･ω･｀) With all the harem animes you almost never get a definite conclusion (with any girl) because it'd tick off all the fans of the girls who weren't picked. (￣Д)＝３ (This is one of the reasons I'm not terribly fond of harem-based animes.)
